Low Carb Grilled Cheese Sandwich

If you haven’t noticed by now, this site often encourages the easy path with most things low carb and keto despite some of the lengthier posts or recipes. It’s important to know how to do things from scratch to really build that foundation of knowledge, but the reason for promoting the easier or more convenient options is because being super strict and eating clean all the time just isn’t sustainable for most folks.

And that’s okay, we got you. This Ketofy My Favs challenge is a great example of a super easy, super fast keto friendly meal that might echo memories of childhood comfort food.

It doesn’t really matter what age you are – there’s something comforting and nostalgic about that melty cheese between two pieces of buttery, toasted bread. Even better with piping hot soup. While you can make the bread and soup from scratch if you’d like, we’re going to stick with the easy path here. We also include ideas for low carb breads and soups readily available in stores and online.

Low Carb & Keto Friendly Grilled Cheese Recipe

Ingredients

  • 2 Slices of Low Carb Bread
  • 2 Slices of Natural Cheddar Cheese
  • 1 Slice Natural Provolone Cheese
  • 2 tsp Unsalted Butter, softened
  • (Optional) 2 slices of crispy cooked bacon or whatever else you’d like

Note: Swap out the cheese for any kind of natural cheese you’d like and serve with Low Carb Chips or Soup (not included in nutrition info).

Directions

1. Heat up a medium to large sized pan over medium-high heat.

2. Thoroughly butter both slices of bread and assemble your grilled cheese. We like bread – cheese – bacon – cheese – bread. If you’d like to try something new, you can put a slice of cheese down first and that will seriously crisp up that crunchy crust.

3. Place assembled grilled cheese sandwich on piping hot pan. Let it toast for about 2-3 minutes or until desired toastiness is achieved and the cheese gets slightly melty.

4. Carefully flip the sandwich to the other side (fish tongs help here) and let it toast for about 2-3 minutes or until desired toastiness is achieved. Add more butter if needed/desired.

5. Remove from pan, cut in half diagonally (optional, but recommended) and serve with your favorite side such as low carb chips or low carb soup.

Tip: If you’re trying to reserve calories, use just 2 slices of cheese or thinly sliced options and choose a low carb bread that’s low carb/low fat rather than low carb/high fat.

Everyday, it seems like new low carb breads are popping up in familiar places – in your favorite grocery store or your preferred online retailer. The majority of these ready-made breads contain Vital Wheat Gluten, and in some cases, something called Modified Wheat Starch (basically modified maltodextrin). Those who are sensitive to these ingredients may have a reaction and spike their glucose levels. That said, these are several steps forward (and away) from the easier, carby bread options lining the aisles. If you absolutely must have bread and cannot make it at home, you have options! Just be mindful.

Low Carb Soup

What’s a grilled cheese without soup? Slightly less comforting. If you’re missing this combo – no worries! Low carb soup exists, even without the low carb labels. Check out another excerpt from our Easy Low Carb Substitutions post:

Soup: Broths, Creamy Soups, Miso Soup, Egg Drop Soup, Keto Soup

Soup is one of those foods that might be naturally low carb, depending on the type and brand. Which means, it might not advertise itself as low carb when it is. Annnnd that means, ya gotta check the label. In general, broths and creamy soups tend to be fairly low in carbs. Try to avoid noodles/potatoes/rice/sweet options as well as canned but if you must, be on the lookout for lower sodium options. Sodium tends to be less of an issue when you’re on a low carb or ketogenic diet, but these cans pack a VERY high dose for one meal and that may not feel great.

We really like the few Kettle & Fire bone broths we’ve tried (and that says a lot as we’re not huge bone broth fans), though I’d rank some of these (like Butternut) as just low carb friendly and not keto friendly despite the product’s description. Same goes for some of the soups listed below so be sure to read that label first.
