Breaking bread is to share a meal, it’s to be part of a community. Bread connects us across multiple cultures and oceans. In this context, to say bread is life is *not* an exaggeration.

And thankfully, bread is still very much a part of most low carb diets. It’s all about finding what works for your body, budget, and schedule.

Homemade Bread

People look at me sideways when I share pictures of the ketofied bread we’ve baked and the sandwiches we’ve made with it. Traditional bread is usually the first thing to get axed on any low carb diet, but why kill such an awesome food boat when you can ketofy it??

Update: Over the last year, we’ve been extremely happy making our own version of Homemade Low Carb Bread that’s pretty forgiving and doesn’t require much effort – especially if you have access to a food processor, stand mixer, or bread maker. We’re always tweaking the recipe as we learn new tricks. Check it out here. This dough makes it easy to recreate a number of bread recipes including loaves, hot dog buns, burger buns, focaccia, cinnamon swirl bread, cinnamon rolls, and more.

If a massive quantity of cheese agrees with you, look no further – mozzarella makes the base of this easy dough which can be turned into just about any bread-like thing out there from burger buns to bagels to pizza to cinnamon rolls.

There are also about a bazillion variations and recipes out there (including nut-free and 2-ingredient versions). The base is usually a combo of 1.5 cups mozzarella, 3/4 cup almond flour, 2 oz cream cheese, 1 egg, and seasonings.

By some kinda cheese magic, it manages to mimic the texture of bread really well. The downsides? The calories are very high if you’re looking to splurge on several servings and anyone sensitive to cheese might have some digestive struggles. Sometimes it’s completely necessary and worthwhile to splurge!

This was a surprisingly awesome alternative to the traditional fathead + almond flour combo. We combined finely crushed pork rinds with shredded mozzarella, dry grated parmesan, 2 oz cream cheese, 1 egg, and Italian blend seasoning. You can search online for “pork rind bread” and find a bunch of recipes for exact ratios and baking instructions. I always find they use WAY more cream cheese than needed, but since this is all baked at home it’s 100% up to you how much of each ingredient to use. Cheese-based breads are incredibly forgiving when it comes to measurements.

90 Second Bread

There are about 5 gazillion low carb versions of this floating around online, but the base is usually the same:
– 3 tbsp almond flour or 1ish tbsp coconut flour
– 1 tbsp butter, ghee, or coconut oil
– 1/2 tsp baking powder
– dash of salt, optional seasonings
– 1 egg

Mix in a microwave safe bowl and microwave on high for around 90 seconds. Voila, nearly insta-bread.

It’s a lovely last minute option when that craving hits, usually a bit of a sponge that does well toasted – but this is not how I keto. If I’m getting out any of these ingredients then I much prefer making a quick, large loaf when time permits. Either way though, it’s a good option that should appear on any low carb bread list.

My absolute favorite loaf of low carb bread! It’s buttery, delicious, and easy to make, though like most almond flour based breads – it tends to be a bit dense. Doesn’t matter to my taste buds, the flavor here more than makes up for it. Be sure to read some of the recipe notes and tips, especially to reduce any overly eggy taste.

Pizza Crust & Buns using modified Keto Flour

Soft, fluffy bread that smells and tastes like yeasty flour bread, but with absolutely minimal carbs? Yep, that’s just what Keto Luna’s been experimenting with in her test kitchen. Unfortunately, I can’t try out her recipes exactly as written because one of the main ingredients is Casein which I’m allergic to. I’ve attempted to create a version with modifications to the ingredient list and ratios, but the amount of whey and fiber had us dubbing it “gassy pizza” – because we couldn’t stop eating it (so tasty) and because it made us all very gassy ~X_X~ Keto Luna warns everyone of these side effects if you aren’t used to that level of fiber, so keep your portions in check until you know!

Megan’s recipe is inspired by Diedre’s “For Real” Low Carb Bread, Keto Luna’s Keto Bread, and She Calls Me Hobbit’s Keto Iron Chef’s Keto Bread. It’s predominantly based on Diedre’s bread maker ingredients, but omits the sweetener and makes use of inulin (pure fiber) to activate the yeast, instead of honey. This is an awesome base recipe that I’ve started to tinker with to change the flavor more to my family’s tastes and it’s going really well. I’m still unsure of including too much oat fiber in my diet and may be looking to substitute most of it out, but it’s a worthwhile experiment and if you’re seriously missing homemade bread, it may be worthwhile to you too. This is a great starting place if you’re curious.

This is one I really wish I could try in its original form. While Zuzana didn’t create it, she did a wonderful job translating the original German recipe from Daggis Low Carb Küche and offers details on substitutions for the hard to find ingredients – Quark Cheese and Potato Fiber (not to be confused with Potato STARCH or FLOUR).

Those two make up the base along with a some ground psyllium husk, bit of baking powder, vinegar, eggs, and salt.

All the photos I’ve seen make it look like a fantastic option and unlike anything else we’ve tried so far. Hopefully we can save up and import some Potato Fiber in the next year and give the original a real try.

Paola is some kinda gluten free, low carb guru in the kitchen. Some of the recipes on Gnom Gnom require quite a few ingredients and exceptional attention to detail, but we’ve found them totally worth the effort – especially for anything bread-like *without* the gluten or tons of mozzarella.

Plus, we’re totally in love with her pillowy soft donut recipe – probably the fluffiest baked good we’ve ever made with almond flour, so notorious for it’s dense nature. However, the one thing we’ve never had much luck with, no matter which recipe we follow, are tortillas. I’m not sure why, but we simply don’t have the magic touch and tend to default to pre-made, store-bought, low carb tortillas instead (see below). If you’re in the mood to try out some homemade tortillas though, Paola offers up a 15-minute tortilla recipe with rave reviews.

When we first started this low carb journey, I needed to find a way to make a very forgiving bread in terms of measurements and time. Most keto and low carb bread recipes require somewhat precise measurements by weight to yield consistently great results. Months of trial and error and lots of research lead me to create my own variation of an almond flour bun. It’s the easiest bread I’ve ever made, takes less than 20 minutes to mix and less than 20 to bake. You can also view the recipe on my Instagram @keto.catez.

In-Store or Online Bread

One of the many reasons everyone ends up eating overly processed, high carb foods is simply convenience. Budget plays a huge factor too, but convenience usually wins out either which way. Many of the items that used to be in our pantry were loaded with completely unnecessary added sugars, fillers, and who knows what else – especially the bread. Mmm, bread, so easy to make so many things with it. Quick lunch, simple breakfast, grilled cheese, om nom.

Luckily, many small time companies and big time manufacturers are starting to make healthier, convenient options available to the masses. However, not all low carb options are created equal. Just because something’s marketed that way doesn’t mean you won’t have an adverse reaction to some of the ingredients in it. And just because it’s lower carb, doesn’t mean it’s grain free, gluten free, or even sugar free.

All that said – DON’T BE AFRAID to try something new – double check the label to see if you’re happy with the macros and ingredients. Take note of anything that doesn’t seem right and how you feel after eating it. Avoid it in the future if it’s not a good fit for your body or only indulge in it once in a blue moon. The more you know, the less you’ll worry.
